I think it'd be "Mr. Von S-" that stuff used to be in the back of the dictionary. There are some Germans and Germanophiles who'll be along shortly to give you the straight dope.

Thanks.  I am writing to somebody with a "von" in their name.  I went with "Dear Mr. von ....."

As far as the letter to Max von Sydow, I also thought he did a fine job in his brief role as King Osric.
