MsBubba left me in charge of dinner for this evening.  So I did my best.

Tossed Salad with smoked salmon and Gouda

Shrimp cocktail

Homemade Jambalya with crawdads, sausage, and two shanks for seasoning

French Bread, not homemade.

And Homade brownies for Dessert.

I think I am becoming semi-domestic.  She has me trained.  ("Yes, Dear.")


Not really. This pays off very well every time I cook for her. Tonight is that night.

Sounds really good. I'd be all over that meal!

ETA: I read the "menu" again, and that is really a 1st class meal. Sounds like a "10" for a dinner pic!

They make KICK ASS fish tacos!

Fish Tacos

1/2 cup sour cream

1/2 cup mayonnaise

1/4 cup chopped fresh cilantro

1 (1.25 ounce) package taco seasoning mix, divided

1 pound cod or other white fish fillets, cut into 1-inch pieces

2 tablespoons vegetable oil

2 tablespoons lemon juice

1 package (12) taco shells, warmed

Toppings: shredded cabbage, chopped tomato, lime juice, taco sauce

Combine sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.

Combine cod, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.

Fill taco shells with fish mixture. Top with cabbage, tomato and sour cream mixture, lime juice and taco sauce.

Makes 6

After action report on the meatloaf: it was indeed good, would have been better if I did it but it wasn't bad at all (I like to put bacon on the top) . As for the creamed corn I wished I had thought of that haven't had any in about a year.

Venison chili that I made on Friday.  It's reasonably spicy, and almost completely vegan!  100% vegan, if you count three pounds of dead deer as a vegetable.

It's also a complete, healthy meal in a bowl.
