I have this beautiful Smithfield Prime Boston butt....look at that marbling nom nom nom.

Just hit my Traeger Pro 34 about thirty minutes ago.

I smoked 'em for 30 some years but they kick my ass now since they put the "fire safe" paper on them.

I would like to be able to get a smoker but I don't have the patience to wait that long.
Grilling steaks is about all I can do.

Honestly, you can probably put out some pretty damn good food without having to put in a lot of effort.  Will it be as good as an experienced pitmaster lovingly feeding it wood logs for 12 hours?  Maybe not.  But it's nice to be able to do other things over the course of the day too.

You could look at pellet smokers that pretty much run unassisted, but even charcoal smokers like Weber Smokey Mountains and "ugly drum smokers" run themselves without a whole lot of effort.

I have a pellet smoker, a charcoal smoker, a couple different grills including a gasser, and am fabbing up a custom log fired smoker.  A different tool for each job.

Tonight I have a pork butt on my pellet smoker, I'll sleep all night, and sometime tomorrow morning I'll pull it off and eat it without having to screw with it much.

Just some pepper right now, will get some salt a little rub and some bacon a little before it hits the rack.

The less you fool with it the better it is.  The main thing is keeping the temp in range which isn't too hard with a decent smoker that can control airflow.
