Put this beautiful 9 lb. bone-in Pork Butt on the Big Green Egg at midnight last night... Holding at 163F, and hopefully pulling off the smoker around 4PM at 195F to pull for sandwiches. It was cold last night, when I put it on it was 19F outside with a stiff wind so I had to work on maintaining a steady 235-245F all morning long, but I'm hoping it will turn out nice!

Anyone else have something in the works today?

2 whole chickens getting it tomorrow, then portioned into foodsaver bags for cooking during the week.

Might toss some spam or balogna in there with them.

Did one last weekend.  Wrapped in foil after 6 hours and took it to 200 degrees internal temp.  So tender and tasty it was amazing.

P.s. Did you use a rub?

Nothing today but brisket and turkey breast are scheduled for tomorrow.

Just finished: smoked cheddar, pepper jack, colby jack, antelope pepper sticks and antelope ring bologna. Big day running two smokers. Smoked a batch of salt just to try it.

I used Bad Byron's and spicy honey mustard as a rub.

2 butts and 2 racks of ribs smoking right now.  Iwoke up at 5 this morning to get things going. Love some bbq, college football, and beer.
