I have to go to Willie's 4th of July thing tomorrow at the Austin 360 amphitheater. It's a gesture from the boss so I gotta go; otherwise, there would be some chicken smoking tomorrow. Maybe ribs. Probably ribs, too.

Excellent. I haven't found anything they don't do well. If you can get over the price, your fine. Best purchase I've ever made.

Ive done a ton of smoking and cooking lately.  I told my wife im not doing a damn thing this weekend.  Im going to relax!!


ETA...the next time i do run the smoker, a brisket it shall be.

I can't figure out my electric smoker. Too much smoke, not enough, chicken tastes like old deli slices, I'm about ready to give up on it.

Brisket....Fire at 7am, meat on by 7:45 to be ready by 6.


It's resting covered in the fridge. I injected it heavy this morning with Myron's recipie and have his spice rub ready for a heavy crust. Tomorrow will be glorious.
