Fudge!
Grease up a 13 x 9 Pyrex (or equivalent) dish.
Here are the ingredients:
5 1/2 cups of sugar
8 ounces unsweetened chocolate
6 tablespoons butter (plus some to grease the pan)
2 cups half-and-half
2 tablespoons corn syrup
2 tablespoons vanilla extract
2 cups chopped, toasted pecans
(no one has EVER said that fudge is good for you)
Toasting the nuts:
Add the sugar, chocolate, 3 tablespoons butter, corn syrup and half-and-half. Heat them, stirring occasionally until the sugar and chocolate have dissolved and melted:
Once melted, bring it all up to a boil. Once boiling, reduce heat and cover, boiling for 3 minutes:
After 3 minutes, uncover and heat the mixture until it reaches 234 degrees:
Once it does, remove it from the heat, add the remaining 3 tablespoons of butter. Let the mixture sit until it reaches 130 degrees:
Once 130 degrees is reached, add the nuts and vanilla:
Now, STIR that stuff like a MADMAN. Stir it up until the glossy look is gone, and the mixture has a matte look:
Once it's ready, drop it into your greased pan:
Let it cool and firm up, and you're done!
Of course, you need a cleanup crew. Pre-washing the pot is always a plus:
So there we go! Not terribly hard, but definitely something I'd not do every day.
