The raw materials...
Yukon Gold potatoes - making mashed with these in a little while.


strip steaks


crush the garlic (this marble mortar/pestle is perfect for smashing herbs and spices)


and the rosemary


coat the steaks with sea salt, garlic and rosemary


They need to sit for about an hour so the salt can dry out the steak and then give the steak time to bring some moisture back into it. By adding the garlic and rosemary, their flavors are basically sucked inside the meat. I keep the flavors on the meat with the help of a bacon press. This goes into the fridge for the hour.


Time to make the mashed potatoes

add in a little garlic, some butter and heavy cream. That's all you need.

The steaks as they come out of the fridge


sea scallops


dried off, dusted with flour and sauteed in a very hot pan with olive oil. After a couple minutes on each side, I put some butter in to brown it, and then a bit of chardonnay to make a brown butter sauce.


steak cooked on a very hot grill, sorry no photos of that, but here's the finished product.
ETA: the peas started out frozen. I put them in a pan with a little butter and a couple tablespoons water, boil it, cover it and simmer for a few minutes.



the hardware:

I built the rifle on a Superior Arms lower. Super Sniper scope (group buy), ABS Carbon Fiber barrel (group buy), LaRue SPR-E and 11" handguard.
CRKT M16-14FK & Kimber Tactical Custom II.





And, as it's been a year now since my friend EricThe(remembered)Hun  passed away, I prepared a Windex margarita in his honor.

That was Saturday. We had to go get a so-called "combative" prisoner on a warrant pickup. He was all mouth and no go. He kept verbally intimidating the 4 officers at the dept we picked him up at... Large guy, too, about 6'02, 250. Soon as I walked him to the van, told him I'd show him the warrant before taking off for county jail, and he looks up at all the guys from the other dept, says, "I'm just fuckin' wit' you guys."

Gotta love dealing w/ scum like that day in and day out.

Thankfully it was my last class up there (those chairs in the training room were beginning to get uncomfortable after 8 or so hours).

Anyways...going by the responses I think you could rank one of the best overall dinner pics ever.

the prisoner wasn't going to do anything. If he was, he would have done it when they were trying to arrest him in the first place. Once in jail, he just needed to mouth off. The officer I rode over with to get him and I are both very good at talking people down, neither of us likes to fight but we're both good at it. I just explain to them now that I've got this taser with a camera on it and the first time I used it the video didn't come out very clear. I tell them I've been waiting for a chance to try it out again. Nobody ever wants to buy a ticket to that ride.

Thanks, Gabby. I used to hate peas. But I buy the sweet peas, and I've grown to really like them with a little butter & salt. Every once in a while I put in white pepper, too. I should have added that tonight. I overlooked it because I was paying too much attention to making sure the scallops and steak finished cooking at the same time.

Okay, I have a few problems with it.  Those peas...ugh! I hate 'em.  Scallops?  I'm alergic to shellfish.  I would have preferred to see the taters mashed by hand, and not in a mixer However, everything looks great and this was well thought out and presented. Plus, it's my favorite weapons combo- AR+1911.  

I give you a 10 sir.
