I prefer to saute some garlic in olive oil and then add spinach. Eggs whisked with milk added. Salt and pepper. If you throw some diced tomatoes on at the end, you can scramble them into the eggs and they won't overcook. Add some dry whole wheat toast and you're good to go!

Back in the days on the offshore supply boat, they used to cook bacon, sausage patties, and smoked sausage in a big iron skillet. Four pounds of meat every morning. Once it was done, there was a 1/2" of grease in the pan, and in went the eggs. Unbelieveably good, but after a month of the same thing every day....

After my brother's triple bypass surgery from eating greasy spoon food, no way. A little olive oil does a great job. No, I'm not a commie, just prefer to eat smart and enjoy the grandkids a lot longer.
