The plan is to use one of those fish metal trays and let the fat drip and season the hamburgers.

I've done it directly on the grills. It was really good. I used thick cut bacon and had to be careful that the dripping fat didn't cause flare ups and burn the bacon

Do it directly on the grill.  Watch constantly.  It tastes great and it seasons the heck out of the grill.
