24' x 30' x 12' tall insulated steel shop/mancave. No windows or skylights.

Might be a little overkill if your insulated.  A 2-ton unit would probably handle your 720 sq ft.  I'm assuming there is an overhead door.  Who's going to put it in?  Are you aware that internet purchases of equipment void the warranty?

One of my best buds is a HVAC tech he will help with install and He recommended a 4 ton even though it would be over kill. He said "How fast do you want it to cool back down after you open that 18' door?"
