This will be my third installment on trying to making the perfect prime rib dinner
Small 2 bone prime rib for Easter Dinner for the three of us.



Trimmed all the fat and removed the rib bones for a later treat.

Liberally kosher salted and refrigerated for two days prior for a dry brine.  Helps to draw out the moisture and break down the enzymes.
With the bones removed and trimmed, use twine to make it as round as possible so you get an even cook.





Liberally season with Adams Sear and Crust, fresh ground pepper and kosher salt on all sides and rub it in.



Insert the thermometer probe into the center of the roast.  No guesswork when trying to get that perfect medium rare.



Set the oven to 225, the thermometer alarm to 100 and cook for 3 to 4  hours until the thermometer goes off.

Take it out of the oven and tent it in aluminum foil for 30 minutes to let it rest and reabsorb the juices.  It will continue to cook to 115 degrees while resting.

While waiting through the rest, fire Up the Akorn (BGE knock off) to 600 degrees for a great smoky crust. Put the roast on the grill for 5 – 10 minutes and you’ll have a perfect smokey sear until the internal temp reaches  124 degrees.

Turned out great


Prime rib, creamed horseradish  sauce,  asparagus with dijon lemon sauce, mushrooms, pan fried herb potatoes along with a nice California Merlot because I like it.





Guns are a “Surprise Cock Fag” AR-15 SBR and one of John Browning’s best gift to man,  a 1911 Kimber Eclipse and the bayonet my dad left me, who was an army veteran and one of the greatest generation, God rest his soul.

I like it to finish at 135 after resting.

Should work pulling it at 125 but with the leave in thermometer heat is conducted in so temp reading is falsely high by 5 or so.

so i had clicked 'reply' to post that i currently have a roast in the oven, when it occurred to me that the cook time had been longer than normal.  hadn't set a timer--just used the thermometer and trusted the alarm to let me know when to check.

yeah...the alarm was still muted from the last roast.  the thing was a 143 internal meteorite when i yanked it. thank god it was just rump roast instead of a prime rib!
