There. Its been said. It needed to be said, but no one would. We all just kept playing along with the marketing and the ploys and the deceptive advertising. No one wanted to stand out, no one wanted to be that guy who stood up and spoke the truth.

The fact is bacon and brisket both represent some of the worst cuts of meat from the respective animal. Our bacon, American bacon, is a fatty filled experience which leaves us reminiscing on beefs famous marketing line "Wheres the beef"? While not beef we crave, the pork is nowhere to be found in streaky bacon. You'll get all the fat you want and then some however, and dont forget to preach the praise of this fat filled adventure!

Then theres brisket. The holy grail of BBQ. The crown of Texas. The worst cut of meat from the cow, outside of perhaps his tail and tongue! If ever marketing hit a home run it was when they passed off a pet rock as the animal to have. Followed very closely by our famous cut of meat spoken of only in hushed tones and a reverent tone. Brisket. You'll never find it served in rare with a side of horseradish. At that point you may as well just cut up the football and serve the pigskin as potato wedges too. No no. This tough as leather meat needs ground to burgers or sat in a low heat longer than it takes you and your pals to down a case of beer. Hardly the top chart menu item for the discerning diner to be sure, but marketing and the eager followers have us brainwashed into heaven on earth experiences. 

No no, what should be relegated to the same shelf space as hot dogs and fake cheese spread we see pork fat and tough muscle sold as prime time items demanding a princely sum for a questionable quality. I've said it. I've went on record and spoken the truth of the meat. The British, God bless their fine spoken English, have the sense to at least use a back bacon and serve you proper pork. In America? Tough meat, pork fat and God bless America thats good as you can find. How the mighty have fallen.

I don't quite understand what makes the whole brisket cut one of the the worst cuts (in your words) from the cow?  

Can you not prepare it properly, haven't sampled it when prepared properly, just don't care for "foods with fatty tissue", or are you a vegetarian/vegan?

If you've never had a really thick slice of bacon hot off the pan cooked just to where it's got a slight crisp to the outside, and hot enough to render the fat so when you bite into it the fat literally melts in your mouth. Heaven on earth

OP has obviously never enjoyed a properly prepared brisket.  Sorry your life sucks.

Put a nicely prepared brisket next to a nicely prepared prime rib and it would be a really difficult decision for me which to take.

Bacon on the other hand...I agree with the OP.  Bacon is like a spice or condiment.  A strip or two on a burger, bits in a salad are OK.  Eating a slice of bacon by itself is disgusting.

I have no issue with BACON is it what it is and it is GOOOOOOD!
Brisket however takes the care and artistry of experience and wisdom sometimes a little luck to turn a no so great cut of meat into a tender juicy and sometimes GOD like taste of ambrosia
Only a master can work magic on a cut like that and MAKE it taste like almost nothing else

Marketing did not cause people to learn how to turn a previously considered "bad cut of meat", brisket, into a delicious food.  

Just because something used to be considered crappy, doesn't mean it is now.  We learned how to unlock it's potential.

Your way off base with bacon.  Chicken wings would have been a better example for your bad argument.

Yeah, the pork belly and brisket are shitty cuts of meat. Too much fat on one and way to tough on the other.

But curing and smoking bacon and cooking the brisket low and slow makes them taste good. Regardless of how it starts out out I'm only concerned with the finished product.

Also need to take cost into account. Properly smoked brisket is every bit as good as a swankier cut like a filet or ribeye but at a better price.
