Well HKer I don't live in Quebec or Ontario but if they are like my province you will have to buy a non-resident fishing license. Around here almost any corner store sells them.Here are some links that might have the info you are looking for. As far as exchange rate around here it is 30-40% on the dollar.  As for camping regulations unless you camp in a provincial owned park the ownly regulations that would affect you would be concerning open fires unless you camp in a privately owned camp gound. those links should have all the info you need.
