Celebrating my first Father's Day this year, and got to feeling nostalgic. Started my lamb marinade Friday night- 5 lb half leg marinated in olive oil, red wine, red wine vinegar, garlic, dill, thyme, mint, and oregano. My grandfather's recipe. He was a cool guy. He died about ten years before I came around, but from the stories I was told, he was a stand up guy. Came here from Greece in the early thirties with nothing, met my grandmother, was sent back to Greece because he was dating a white girl, came back after a stint in the Greek navy, and married said white girl. He was one of the first succesful Greek business men, and if it weren't for OPSEC, I'd divulge more.

5 lb. leg:

36 hours in:

Starting the spanikopita filling. Do't get shy with the feta.

Mixture. Keep it simple with green onions, spinach, salt, pepper, feta, oregano, and dill.

Getting ready to fold some spanikopita.

Shit's done:

Made some baklava. Brandy was my grandfather's secret. And Mexican vanilla. He didn't mess around with proportions either. The caramelized sugar should flame up pretty well. I can guarantee you this is better than anything you will get in a store. Our family recipe is definately stickier than most. I use almonds, pecans, and walnuts.

Roasted with some potatos, baby carrots, garlic, and whatnot:

I usually like it more rare than this, but I had guests over who I know like their meat more on the medium side:

Colt 1911 with Golden Sabers, PowerMag, BCM 14.5", complete mut of a 20" (morphed from an extra trigger guard and A2 stock), Eagle chest rig with 6 mags of m855, two of my grandfather's knives (I think he sharpened them against concrete), and a cold Real Ale. The rice is jamine rice boiled in chicken stock and colored with saffron. I'm exhausted.

Happy Father's Days guys.

Yeah, I really like it. Pickings were slim tonight. And yeah, that's Corona in there. Everyone needs donor beer when friends come over.

I know what you're getting at, but it was me. I like cooking. I also did the dishes.

I got to finally get around to assembling my rifle, and got to cook a feast too. I'm happy. I did loose a pivot pin takedown detent though. That pissed me off.

Haha, we ate in the dining room. Before the guests showed up, I arranged the gunz. After I carved the lamb and plated everything, I shuffled everyone into the other room. That's when I took my plate and beer for a photo op. Father in law saw me and gave me a look, but he was already buzzed anyway.

Go ahead and add or deduct points based on how creative or pathetic that is.

Get that Colt cut for Novaks.  A 1911 shouldn't be sporting a beavertail and commander hammer and still have GI sight cuts.

That's a 10/10.  Good Job!

I smoked leg of lamb this past weekend for Father's Day.  4lb brined for 5 hours.  Olive oil, simple rub, sit overnight.  Smoked over apple wood  at 225 for ~3.5-4hours until internal temp read 145.

Most excellent and I'll be doing it soon again.

450 for first 20 minutes...dial down to 325 for about an hour and a half. Roughly 20 minutes per pound.I think the last temp I took was about 140 to 150.

I have never had lamb and probably won't, but the rest of the stuff looks delicious.

My aunt Cleo was from Greece.  She made some yummy little white cookies with powdered sugar at Christmas time that were so good!

Unfortunately when I was looking up some info about her online recently I found out that she is 90 years old and a big democrat who has not missed a vote to vote democrat since she was 21 years old.
