For me, and I never would have discovered them on my own or heard them on the radio:

Nightwish

Epica

Kamelot (DAYUM that lead singer has a voice - like Geoff Tate and Steve Perry combined - amazing)

Leave's Eyes

(All hard-rock bands)

Too many to name.  Tell me a genre and I could probably name some you would like.

Off the top of my head from what you have posted I would say:

Tristania (old stuff like Beyond the Veil, before members started leaving).

Die Verbannten Kinder Evas (ambient opratic type stuff, not much drums or guitars).

Tyr

and just because I think they are awesome:  Opeth

I like Apocolyptica, and most people I talk to don't know of their existence.

Lungfish.
Also Neutral Milk Hotel.

I'm a huge HUM fan but they're not really "non-mainstream", just obscure.
I got hipped to KYUSS here. I really dig them now and wondered why I never heard of them in the 90's.

They may be considered more mainstream now, but I like Cage the Elephant.

SouthFM from Dallas was pretty good too.

They are pretty mainstream, they were even on the main stage at Ozzfest one year.
