Yeah, it is only 3 pounds. Just for me, my wife doesn't like pulled pork.

I have been spraying it with apple juice. I think that helps with the bark.

I like Eastern NC BBQ.  I live in SC, but our mustard based sauce doesn't do a thing for me.
I prefer the sauce that is simply vinegar, red pepper, and salt, but I like a tomato based sauce as a second choice, too.
...And NC style BBQ (red) slaw can't be beat!
