Fished out of Waukegan Friday. First time Salmon fishing.
I have never smoked fish, and I don't have a smoker
so this is truly an experiment. Hot smoked one on the
Weber kettle. Indirect heat with Apple.
Now I have to admit it looks like shoe leather, but only the
outside crust was actually chewy. The inside was tender and
juicy. The flavor was pretty decent. Little over smoked, but
I have enjoyed it so the purist BBQ haters can hate all they want.
