I usually scrape out what I can because sometimes there's like 1/4" of grease in there, then fry up whatever I'm going to do.

Well the bacteria do not make you sick the chemicles they produce do, you can kill the bacteria but the chemicals are still there.

FYI bacon grease is geat for cooking pancakes in. Doesn't have to be a lot. Similar to the about of butter you would use. Also add a little butter.

I gagged a little reading this. One of the most vile dishes ever conceived. I have tried some horrific stuff and Ill eat century eggs and surrstromming before I would even consider marzu.

Hell, sometimes I've gone a few weeks cooking sausage and bacon and eggs, etc in the same skillet every morning. Never washed and only scraped out, wiped with a paper towel every few days (grease got too thick).

I can tell right away you are not from the South, every self-respecting household has a bacon grease container next to
the stove for seasoning.


Yep, looked sort of like a like a small coffee percolator with a strainer basket to catch the large particles from the previous fry. My wife keeps ours in a small plastic container so we have to let it cool before pourng it in.

Also old timers smoked pork then put it in large cans and covered it in hot lard (bacon grease) for storage.

We might die fast in the South but we will be well fed and have a smile on our face.

Hell yes you can. I like to cook steak for dinner and bacon the following morning. I call it "steacon". If its the age and condition of the grease you are worried about, dont worry. I use grease in my cast iron leftover from cooking i did days prior with no issues.

Bacon grease or vegetable oil will go rancid if left in high heat/humidity. Even here that takes awhile. Use your nose and take a sniff.

I drain my cast-iron pan after cooking bacon, leftover lubes dinner.
