So I want to make some poppers for the Fourth. Someone on here posted a popper recipe with sausage mixed into the cream cheese and I didn't save it.

And this is the pork rub that I use. It is not my recipe, I copied it from the Primo Grill Forum and it works great for ribs and pulled pork. If you make the whole recipe it makes about 2 quarts so I usually cut it in half or thirds.

This works well with ribs, butts, etc. Its a little spicy so feel free to cut the cayenne to your liking.

Kelly’s Almost Famous Pork Rub

Ingredients

1 cup Sugar, Brown
1 cup paprika
½ cup onion powder
¼ cup Pepper, Cayenne
¼ cup Oregano
¾ cup Garlic Powder
½ cup Chili Powder
¼ cup Pepper
1 cup Salt
¼ cup Ground Cumin (thanks for the catch Finney)

Instructions

Mix all above ingredients by hand. Store in an air-tight container.

I've seen many variations.  Is this what you're looking for?

The only variation I normally do is put the 2 halves together, then wrap in bacon.

I core out the seeds, stuff with cream cheese, wrap in a thin slice of venison tenderloin, then wrap that in a slice of bacon.  Put on the smoker or at least a charcoal grill.



My favorite food ever.

Core the jalapenos, remove seeds.

Stuff with lump crabmeat and a slice of gouda or edam cheese.

Wrap with bacon that has been marinated in Allegro overnight, securing with toothpicks.

Roll in egg and dredge in cornmeal seasoned with salt, pepper and cayenne.

Deep fry.

I like to half the jalapenos and leave the stem and seeds for heat, then fill them with pineapple cream cheese, a medium raw shrimp and then wrap in bacon. Always turns out great, the heat is cut by the pineapple cream cheese.

probably my take on them

my ABT are a little different than what has been posted so far....

cut stem end of pepper off and core out ribs and seeds(how hot do you want)

brown 1lb of you favorite breakfast sausage and drain. let cool till just warm

add 3/4 - 1 block of soften cream cheese(this depends on shrinkage of sausage) mix well.

add additional seasonings. I add chipolte and cayenne .

stuff into peppers and wrap with bacon.

place into smoker and cook till tender/ bacon crispy.

enjoy.

pretty much this.  or you can put a piece of cooked bacon inside or use other cheeses.  you can basically put any shredded cheese in it.  fuck cream cheese.

Mix lime juice into the cream cheese mix with the seeds from the jalapeño to taste.

Stuff the peppers from the stem end

Wrap with bacon

Secure with tooth pick

Place on grill and cook bacon to taste
