Now I need some low and slow tips.



In a month, I will be doing up a brisket for about 30 people so I want to get the technique down before then.  Gimme your secrets for tender brisket, ribs and sausage.

I cook my brisket low and slow. Generally at 225-235 til it's done. How do you know when it's done? When a butter knife slides into the side, like butter.



Hey, it works. Generally about 8-12 hours, depending on size. Are you doing a flat or whole?

You're going to feed 30 people with an 11.6 lb brisket???

It'll lose 35-40% of its weight after the cooking session, so you'll be left with 6 or so lbs of meat, not counting fat.

I'm also cooking a butt and a couple tri tips.  Plus all the sides.  There will be plenty of food.
