OP- if you don't like it raw and you don't want to cook or bake it, you don't really have a lot of options left. Intravenous coconut, perhaps?

I should have posted this in the foods and cooking sub.

FYI. I soaked it in sugar water and honey. Turned out ok. I diced some up and mixed it in melted chocolate. Of course that shit is good lol

Wait... you don't want to eat it raw
but you also don't want to cook or bake it?

.... buy it precooked?
If that's not an option for you, I'm not sure what you're hoping to find.

ETA: well soaking it, technically it's still raw. That's kinda like steak tartare - chopped meat covered in seasonings. It's still raw really, but it's finished.

I cut it up into pieces then add it to smoothies. The smaller chunks help keep it from killing the blender. Adds a sweet flavor and it helps thicken.

1 cup semi-frozen greek yogurt
1/4 cup each of blueberries, bananas, coconut, chia seeds and peanut butter.
1/2 cup of carrot and kale.
Two tablespoons of good honey.
Two scoops of whey protein.

Blend that shit together after a morning run before work, chug it down and enjoy feeling energized, motivated and not hungry again until dinner.

My wife just gave me some similar to this from the Asian Grocery store. Her nail girl loves her and is always giving her ethnic snacks and gave her a bag of Dehydrated Coconut that tastes like it had been sweetened lightly with powder sugar I think.

I was really good, I may have to walk my 6'3 ass in that Asian Grocery Store, scare some people, and grab some more.
