My home office is a mess and I ready for a good housecleaning.

How long should I keep financial records like paystubs, bank statements, credit card statements, bills, etc?

I'm thinking 2 years on the paystubs, bank statements and the like and 1 year for the other bills (utilities).

For taxes paperwork, I think I'll be safe if I keep them for 5+ years and loan paperwork will be kept until the loan is paid off + 2 years.

I don't keep pay stubs, W-2 suffices. I don't keep credit card statements, cancelled checks or statements since I can get copies if needed. Never keep utility statements.

Now if one is a business, 5-7 years

I keep tax returns for 6 years

bank statements 1 - 3 months, if you ever apply for a mortgage they want the last 3 months' worth of statements

utilities a year only because I can look at say my electric bill from last year and get a feel what the next electric bill will be give or take

credit card statements just the last month's.  Same for cell  and cable bill
