I'm battling Ebola or something, and I've got a real hankering for some Chicken and Rice soup. The only can I have expired in Dec of 2012. Should I fo?

Absolutely. I ate a can just over 4 years past the experation date of...clam chowder . I was at the cabin and didn't think to look at the can until after I was finished and cleaning up. Tasted fine.

It's fine.

I just ate some soup with a 2008 exp date.

It had a slight dry(er) crust at the lid, but I just scraped it off, the soup was great.

AOK so long as the can isnt damaged

Ive had them up to 4 years after and except for separation and color/texture its fine

As long as the can is intact/not bulged, it's fine. The taste and some of the nutrient content may suffer over time, but it's safe to eat.

I had a can of condensed tomato soup that expired in 2007 last month
It tasted fine, a little darker in color

It doesnt say expired or bad, most of them say 'Best buy ..' Supposedly it loses nutrients or some shit. They just want you to throw it away and buy some new.

I used cake icing that expired in 2010 a month ago ... let me tell you - don't do that.

I Consumed most of a MRE that expired in 2005 ... it was OK, but the entree tasted weird.

I ate a can of corned beef hash that was a couple of years past the expiration date. I didn't feel well for a while afterward and it was until just recently that I could eat corned beef hash again. But, it smelled kind of funny when I opened it so that should have been a warning.

It's good for a very long time as long as it isn't acidic as in having tomatoes in it. Those rot the can and make the contents darker as stated above. If you let them go too long they disentigrate the can and the contents leak out on the floor.

If not acidic I would say it would last longer than MRE's
