Basically how did this term go from being a cannon in the olden days to being applied to all firearms?

In the military, your dick is your gun and you use a rifle.

The term "gun" predates "firearm" by about 300 years.  It's hardly surprising that instruments that share a common origin should also be referred to by the same name.
