I'm shopping for head gaskets for my Subaru.  I have seen graphite and MLS offered.   So is one better than the other?

MLS for boosted applications

I would personally go with the MLS.

x3 for MLS, even if naturally aspirated.  Might cost a few extra bucks, but far superior to 'traditional' gasket materials and construction in their ability to seal at high pressures (boosted) and high rpm (head bolt stretch/cylinder head deflection).

MLS for the win.

MLS works good, but be aware, they are extremely sensitive to the quality of the finish, cleanliness, and flatness on the heads and deck when you build it.

Graphite composite is much more forgiving, it will conform to anything and seal well.

yep

Always check with the manufacturer of an MLS gasket to see how fine/coarse of a finish is needed on the deck and head surfaces.

A generic "quick and dirty" machine shop mill job is sure to leak.

I just put new MLS gaskets on my 14.8:1 406 sbc that turns 7000rpm. I had a timing chain failure, so the top end got rebuilt. It had Mr Gasket MLS gaskets already on it and there has never been an issue with seal. They came with a note telling the required rating of the finish.
