I tried making some green salsa a while back, am going to try again, but that bitter tasting residue on the skin didn't wash off first time and made the salsa bitter or to tangy. How do you remove that stuff?

Quarter and peel them.

The espousa scalds them slits the skin and pops them out and discards the skin.
