Long green chillies, roast, peel, seed, and stuff with colby cheese slice.
Whip egg whites to hard peaks, do same with yolks, then fold yolk and whites together.
Dust stuffed chillis with flour then dip them into egg mixture.
Fry till golden brown and cheese melts.
Make a sauce out of onions fried till translucent, add tomato sauce, let simmer.
Pour sauce over rellenos and enjoy with refried beans.

Way too hard for me to attempt.  Best I've ever had was at On The Border restaurant.  They use the mild poblano chilis.  We're going there Saturday night!  Good stuff...[:D]
