Love it!
Only if it's homemade just before it's needed.
I make it often and use the Serious Eats "foolproof 1 minute Hollandaise" technique.

You do know bernaise starts with hollandaise right? Just a little bit of taragon and champagne vinegar are added to hollandaise.

I'm pretty sure hollandaise is one of the mother sauces.

I prefer Bearnaise.

Yep.
Before I saw this video I didn't own an immersion blender so I immediately went out and bought one.
I couldn't be without one now, I use it for all sorts of things!!!

Two of those on one side of the plate and biscuits and sausage gravy on the other, with a couple of slabs of scapel. Great after duck or goose hunt brunch.

That sounds perfect. Lump crab with hollandaise is divine. The blacken red took it into outer space.

Love it.

I got on a hollandaise kick so hard that it was giving me trouble with my partial plate.

Went to the dentist when my plate got loose. He asked what I'd been eating because it actually looked corroded.

Told him how I loved hollandaise.

He said, "Well there's your trouble. You need a chrome plate".

I said, "Chrome? Never heard of a partial made of chrome".

So, he goes," Well, there's no plate like chrome for the hollandaise".

I used to like hollandaise but was informed by my lovely wife that "hollandaise made from a mix is sacrilege."

But.........the homemade hollandaise my wife makes is way too lemony for me.

It clashes or overwhelms whatever she puts it on. All I taste is lemon. She says that is what its supposed to taste like.

While i sit there all puckered, shes is oooing and ohhhing

Make it yourself. There's a video posted in this thread.

EDIT: You should only taste a hint of lemon. If your lips are puckering, she's doing it wrong.

I make my own, it can be adjusted how every you like the taste.
Personally, I like mine just like your wife does - a little on the lemony side (depending on what I'm using it on).
