Rehydrated with white wine, dried plums cooked in a brown gravy. All cooked in the same pan the loin was seared in which was deglazed with white wine before the plums. A little orange juice and chicken stock.  Yeah, it took awhile

Well, I would imagine most insurance companies have a clause indemnifying themselves from intentionally self induced injuries, if people who don't finish cooking pork even have insurance.
