Does anyone have experience with software that restores the music on your ipod back into iTunes?

i paid a few bucks for some software that did this for me... it was well worth the tiny licensing fee...
worked great, preserved all the ID3 tag information, only thing i needed to re-add was cover art... then again this was about 4-5 years ago, so they're probably much better now...

if you're scripting savvy, you could probably mount your ipod as a disk and write a small script to rename each file by information stored in the ID3 tags...
