I'm in the market for a camper and would like advice and opinions from the guys that actually own them. I'm looking to keep it under 7000 lbs max.

I'll be pulling it with a 1999 Durango 5.2L

With your tow vehicle I would not even get close to 7K pounds. I would try and stay under 24' ultralite. I learned the hard way, pulling my 06' Flagstaff 31RLSSS, with an 04' Yukon. The wheelbase is just to short for a long camper and my foot stayed on the floor.
