I've got Fir and Alder also available, I have read both ways about using of Cedar.

I wouldn't use cedar for no other reason than I've always thought it smelled kinda funny. A smokehouse should be Oak.

Tagged for info. I need to build one too.

I don't see why cedar would be a bad choice. Other than the odd smell it puts off and the cost (least around here its big$$$). But I would think after 20 hrs of smoking it the smell/taste would be replaced with glorious hickory stench.

Yeah I would stay away from cedar (no real reason though). I dunno just get some rough cut pine or whatever. board and batten it. I am looking at building one soon.But I don't think the cedar would do enough to warrant the cost.

People smoke salmon on cedar planks all the time.

But I have no idea if that is something to be concerned about or not.

Hell just have one made from steel and be done with it.

Ok I own a welding shop and a saw mill, I can have all of the above.

What I don't have is Pine, Oak, or the knowledge of whether or not I should use FUCKING CEDAR TO BUILD THE MOTHERFUCKER!!

my last smokehouse was built out of plywood. just make sure it isn't treated and then season the hell out of it before putting anything up. good luck getting mesquite though

For all practical purposes it's just a box. The food doesn't really contact the smokehouse and the temperatures are pretty mild as well. I think cedar would be just fine if that is what you have available.
