Low and slow with your favorite gravy, some coleslaw, hamburger rice dressing and your favorite vino!

Recipe for whole birds but it works well with breasts also.

From memory, I believe this to be the recipe from Remington's game cookbook from the 60's or early 70's.

It's not really a Thanksgiving type meal but my favorite is picatta. Pound out boneless breasts, coat in seasoned flour, hot skillet, hit it with butter, lemon juice and some capers. Serve with rice, potatoes or fettucini. It's fast, elegant and tasty.

We like to just make chicken Mcnuggets out of them.  Cut up, bread with bread crumbs, deep fry.

When I worked at the Ritz Carlton in Aspen, we marinated the whole, bone in breasts in olive oil, garlic, fresh rosemary, and juniper berries.  Cooked em on the grill.

I think we served them with some sort of demiglace and whipped taters.  Its been a long time.
