We're having a party next weekend and are thinking of smoking a tenderloin. What are your favorite recipes?

Grill it.


Sea salt, minced garlic, rub in.

I use to butterfly them open, pound it out, then stuff it with roasted red bell peppers, fresh spinach, toasted pine nuts, mushrooms and goat cheese. Roll it together, tie it and smoke it untill meduim rare. Biggest problem with tenderloins is they are to lean. While the above stuffing did not add fat it did add lots of flavor. Looked nice when sliced and on the plate. I would sooner eat a prime rib anyday!

throw in some grilled potato wedges and a couple beers.
