Here is my very simple recipe for chili that I have adapted for my tastes
Note: This is chili, not meat sauce, as you can see from the ingredients
1. Gather up the necessary ingredients:
1 1/3 cups red beans
1 to 1 1/4 lbs ground beef
1 medium onion
2 cans of diced tomatoes (I use tomatoes with jalapenoes; it is actually not all that spicy
1 1/2 teaspoons chili powder
1/2 teaspoon black pepper
1 teaspoon salt
2. Put the dry beans into a 2-quart pot and rinse them. Fill up the pot 3/4ths of the way with cold water and put the pot into the refrigerator. Go away until the next day.
3. Take the beans out of the friDge and drain the water out. Refill the pot of beans with fresh water and bring it to a boil. Let it simmer.
At the same time you are cooking the beans, brown the ground beef in a large pot. Drain the excess grease out (there should not be very much grease if you use good quality ground beef. I prefer 81% lean ground beef)
4. Dice up the onion
5. Drain the beans. Throw all of the ingredients into the larger pot. At this point I added 2 cups of fresh water to the mix. Stir at all together and bring it to a boil. Let it simmer for 2 hours.
6. Voila!
