Last weekend was the first cookoff of the year.  It was 35* and raining Friday night, not the best weather for cooking.  Saturday was perfect, clear skies and lots of sun.  I was hoping to get more photos of the prep work, but it was too damn wet and cold to drag out my camera.  

I slept about two hours between 6AM Friday and 10PM Saturday.  We're a three-man BBQ team.  I took the overnight shift because my teammates had handled all of the set-up work on Friday afternoon.








Chicken halves.







Pork spare ribs.





Brisket.

Ditto on the brisket; stuff looks real good, add some mashed potatoes (or Tater salad) and Texas Toasts and you got yourself some finger-licking good BBQ.

It happens.  There were 135 teams at the cookoff, there were some tough competitors there.

Unless you make Final Table or higher (18th place or higher at this cookoff), you don't find out your score.

Competition cooking is tricky.  You turn in your tray, then it gets tasted by a table of 7 to 9 people.  It will have cooled a bit from when it was taken from the pit and brisket will have started to dry out a little.

This was a TGCBCA cookoff, so the judges were pulled from the crowd.  You never know what cross-section of folks will be tasting your food.

It's not just yankees.  Old folks tend to favor bland cooking, some folks favor sweet BBQ, other favor spicy BBQ.  You have to hope that you get a table that favors your style of BBQ.
