My wife is wanting to get into it, and we are trying to find her a good long-range rifle.
She is very good with firearms and has no fear of them at all.
However she is a petite thing at 5'2" 120lbs.
I don't want her biting off more than she can chew.
Any suggestions?

Define the competition or ranges to be shot.

The AR is quite accurate up to 500 yds, even with iron sights.

Farther than that a .308 bolt gun with a scope would be my choice.

Probably 300 yds.

An AR would definitly be a good one to start with.

Standard A2, 20" configuration.

I was thinking of building her one as follows.
BBL- Either 18" SPR or 24" SS Bull
PRi gas block
Carbon FF tube
SOPMOD stock w/ heavy buffer
Matched RRA stripped upper & lower
Chrome bolt assy.
Gas buster charge hndl
RRA or LMT 2 stage match trigger
possibly a XXX can.

Depends on what sort of competition she wants to shoot. I shoot my National Match AR (that I built myself from parts) out to 600 yards with iron sights in Service Match Highpower. I would like to build another Palma Gun - I shot Palma matches (1000 yrds +) in High School with a Barrett .50. Right now I'm leaning towards a competition AR upper in 6.5 Grendel with the 28" barrel for my F-Class/Palma rifle.

Before I get a long range rifle done though I'm building another AR for 3-gun specifically. Which, of all the things I shoot, I consider to be the most fun (just started shooting it this year, don't plan on stopping ever).

3-gun is great - I think she'd probably really like it.

My 3-Gun AR is going to be Duracoated Hot Pink for the sake of the foulness factor; I'm the only woman in 50-60 shooters there and figured since I already stick out like a sore thumb I should have even more fun with it. I already have three other lady shooters in our area who will be joining me in building hot pink AR's and will then start shooting 3-gun with me. Before you know it I'll have an army of women with Hot Pink Assault Rifles and the number of women shooting 3-Gun in my area will increase several fold.

I am exactly same size as her. I have a Remington 700VS .308 with a Pachmayr's decelerator pad and I could shoot that thing all day as long as I don't have to hold it up!

If she's serious about competition, don't limit her because of size! She may get bored with short distances after a while. If you get her something similar to the Rem then she can swap stocks later if she gets more serious. If not, she still has a great rifle.
