I have both a Bushmaster and Stag carbine.  Their handguards are a little different in that, while they are the same length, the Stag has much thicker (or greater diameter) handguards.  Is there a specific reason for this?  And would they both work with (for example) a Danial Defense Omega rail?

They are both carbines right? Anyway there are two different handguards the standard handguard which tapers from the back down to a narrower dimention at the FSB (these have a single heat shield in them) and the M4 style handguard that are "fat" from back to front these have two heatshields in them.  Any of the carbine rail sets will work on either weapon.

The Bushys are likely standard carbine handguards and the Stags are likely M4 handguards.
The M4 style being greater in diameter.

They both use the same delta ring assembly to attach to the barrel assembly.

Sorry, I have no knowledge of how the Daniel Defense rail mounts.

Yeah, sounds like your Stag has M4 handguards as described above.
