Lets say I was extremely stindgy and only wanted to replace my upper from an A2 to an A3. Could I theoretically pull the barrel and bolt set and install them in the new upper and it would work just as it did in the A2 with no need to check headspacing?

Correct, I have pulled several A2 upper and swapped them into flattops for people.  It happens all the time, its not just cheap, its practical.

Head space is set between the bolt and chamber, as long as those remain the same you could swap it a dozen times with out a problem.
