Having never done it before, I am wondering if, should I decide to paint one, a stainless steel barrel will hold paint?

Yes, it will, but there are some preps you should take first.  It is a good idea to lightly sandblast the steel to rough it up a little bit.  Do not bead blast it as it will be tough for anything to stick to it then.  MJD

It depends on what you are using, and what prep work you do.  I coat all my SS barrels with Norrells.
