OK here's the deal.  Since my mother and girlfriend are already hounding me about what I want for Christmas, I figure why not parts for my upcoming build. I want to get one of eaglefirearms uppers. They sell them complete with bc/bolt, which is how I was gonna order it originally, but that's too much money for me to ask them to spend. So, if I order the upper minus the bolt carrier assembly myself and let my parents get the assembly later, will there be any issues?

If I've read correctly in the past, as long as all the parts are new there shouldn't be any issues (headspacing, etc.).  If the parts were used then I might need to worry about that stuff. All parts will be from the same manufacturer.

Is this correct?

Heck I built one with a used Armalite A2 upper, New Bushmaster barrel, stag arms complete bolt carrier and charging handle, DPMS sites. and finished building a half complete Peace River Arms NM CAR float tube from Armalites specials web page.  This combo shoots as well or better than any factory assembled upper I've shot.
