It's headspacing of the barrel and extention that is most important, once that is done then it doesn't matter what happens after you mount it to a receiver, you can't change the headspacing, correct?

Correct.  Headspace on AR-type rifles happens between the bolt and the barrel extension, and can be measured without an upper receiver at all.  The upper receiver has absolutely no impact on headspace.
