I have a few carbine AR's (collapsable stocks, 16.5" bbl etc) but I want to switch some over to the full size A2 stock. Can I just buy the stock and swap over or do i need to change buffer, spring and tube as well?

Rifle buffers are a lot larger and heavier.

You'll need a new buffer, spring, and rec extension, as well as the stock.

Magpul MOE fixed stock will work with your carbine setup.

So the buffer/spring is just fitting the length/style of stock you are installing? I was under the impression that different length gas systems would dictate what buffer/spring to use?

Yes.   An A2 buffer in a CAR extension wouldn't let your bolt come back enough, likewise, a CAR buffer in your A2 extension would have the carrier impacting the charginghande/receiver to stop it.
Buffer weights/springs (for their appropriate extension) allows fine tuning.

May require a spacer too, some receiver extensions (maybe all) require a spacer to to be used with a A2 stock.  Mine did anyway.
