OK...I am at a loss....why 7-08.....just go with the .308/7.62x51.....ammo for what you want is a hard thing to come by.....just asking..

And so is 7.62 x 51 NATO / .308 winchester and you have the added benefit of surplus military brass and ammo....and I've seen .308 in a bait and tackle shop in the middle of nowhere......
