Looking at these stocks but heard on video review that the cheek riser gets in the way of removing the bolt.  Is that the case?

yes.  You have to remove the cheek riser to remove the bolt.

My stock one I don't have to. Not sure if you add higher risers.

Ok good to know, thanks.  There are 3 cheek risers. I wasnt comfortable getting a stock that I either have to take the action out of the stock or taking part of the stock off just to remove the bolt.

Why does that concern you?  It's literally one allen head bolt that comes out then the cheek piece comes off.  It added a total of 1 minute to the cleaning process.

I have a Remington 700 short action 308 in a Magpul 700 Hunter stock.  I Use the highest cheek piece they make and my bolt comes out without any issue.

Weird... On my Remington long action, using the riser the stock shipped with, I had to remove the riser to remove the bolt.  On my buddies short action Ruger, using the riser the stock shipped with, he also has to remove it to remove the bolt.
