I have a few.....

375 H&H
What a great, historical round!
I have a M70 in 375 that I took to Africa a few years ago.
I was after plains game, and with 250gr Barnes TTSX, it was a laser out to my longest shot of around 200 yards.  Everything was bang, flop.
Not at all hard to shoot.  Recoil from a 300WBY is much worse IMO.

7x57
Another great one from history.
You really have to hand load to get the most out of it.
For deer, I stick to the 139/140 gr bullets, and have just started playing around with 175s.

more to come later with pix......

I'm a simple man

30-06 for pretty much anything here in North America

If down the road I were to take a trip to Africa...I would probably go 375HH....haven't put much thought into it as I have 4 kids to help through college before that even becomes a feasible reality.

Gotta say for elk, in most of the places I find them, the 45-70 in a carbine is my favorite.
Lightweight, very accurate within its range and hits them hard.  No flopping, running on any nonsense.

When they are not in the heavy timber, or before I got into the big bore, -06 or 300WM worked well.

.30-06 Springfield is my absolute all time favorite with .30-30 WCF tied for 1st Place followed closely by 9.3x62mm in 2nd Place.

I have other hunting guns in .308 Winchester, .270 Winchester, .243 Winchester, .32 Winchester Special, 7.62x39mm, and .45-70 Government as well.

.270 win is what I use. I'd like to get a 45-70 brush gun some day.

I never hunted anything bigger than deer , but I had a few favorites.

6.5 Swede is an awesome round and very capable.

.270 was my mainstay and a great round

.303 brit , yep a big time lop round that I just liked. Not many options back in the day for ammo , but it did a nice job under 100 yds.

I tried using a .300 Win mag and never cared for it. The damage it caused was too extensive and most of my shots were under 100 yds.

So many to choose from.

6.5G.  Still not bloody (When I take a few with it I will form my opinion)
308Win. 7 Deer, 3 hogs.  (Favorite).
270WSM.  21 Deer, 1 boar Hog (Deer crusher but no fun to shoot)

I have carried a 5.56 a few times but have not had a chance to use it.  It is not a go to cartridge.

I have 2 Sakos in .270, and 2 in 30-06. Heavy barrel Varmint in .308, and a National Match AR in 5.56.  I can hunt anything North America by going for the appropriate bullet.

Tikka T3 lite 7mm-08 which has served me well for 10+ years.
LaRue 20" 5.56 barreled frank'n ar15
Red Hawk Custom Rem 700 action 300saum

The ones I have just recently added this past year.

LaRue UU with a LaRue lower 6.5 grendel
Savage model 10 Predator Hunter 6.5 Creed

While searching for a new hunting rifle I was stuck on caliber and contemplated various non-magnum large bores. In the end I chose .30-06 just because I can find it in the most remote regions of the world and it is more than adequate on most large game.

I love the 6.8 spc and oddly enough the .40s&w has become my favorite pistol cartridge. I am now waiting on the new Ruger PC Carbine in .40 s&w to show up at the LGS so I can pick one up.

I cannot leave out the lowly .22LR, if the EOTWAWKI happened I think I could survive pretty well just with my Marlin 60.

Favorite hunting cartridges are .22LR and 7mm Rem Mag. In theory I should be able to take on anything in North America with that 7mm.

I refer to mine as my ".35 Waylayer".

Only hunting rifle I have currently is a .270 for whitetail.  Plan on adding a 338-06 and 308, along with a 6.5 Grendel AR.  Should have all my bases covered with that.

45-70 has probably been my favorite cartridge for the last 20 years or so. Although I’ve been flirting hard with the 6.5 Creedmoor recently. Then you have my first love the great .308, killed more deer with it than any other.

I've hunted with the following, and it is game dependent:

12ga
7mm Rem Mag
30-06
270 WIN
6.8 SPC
6.5 G
.223
.22LR

As of last fall, the last whitetail I shot was with a 6.5 Grendel, @ 201yds.  My dad shot his using my 6.8 (90yds) last year.   Both are AR-15's.  It's been a few years since I shot anything with a bolt-action rifle.

I do not have a large variety of calibers to choose from, but my go-to as of today is 7mm Rem Mag.

I also borrowed my Uncle's Rem 700 in 25-06 and will likely take it hunting this next season. From my research is is a superb whitetail caliber and I can handload for it. It may become my favorite caliber due to recoil, but the rifle chambered in 7mm Rem Mag has more sentimental value, so it will likely get more love.

I also have 308 (semi) and 6.5 Creed (bolt) available but have not hunted with those yet. The 308 is set up for Hog Hunting if I ever get a chance to go.

While I haven't hunted with either, I really like 6.5 Creedmoor in a large-frame AR and 7mm Remington Magnum in a bolt action.

7mm Remington mag was my favorite for years.  I’ve slowly migrated to larger calibers anymore.  338 win, 375 holland and 416 Remington are my favorites now.  If I want longs s flat then I have the 7 mag and the 300 rum

For hunting I have been on a 450 Bushmaster kick.  Its been a fun gun to reload for and I enjoy shooting it.

My 20-inch 450 Bushmaster AR

Left to Right: Barnes, 200gr XPB, Barnes 275gr TSX, Hornady 240gr XTP/MAG, Hornady 300gr XTP/MAG, Hornady, 225gr FTX, Hornady 250gr FTX, Remington 405gr SP (resized).

This is my favorite round, the Barnes 275gr TSX

This particular bullet went through a raccoon and about three feet of forest floor.  100% weight retention.
