I have a robust little mint farm going, and I am getting tired of not doing anything with it every summer.

Kids chew the leaves off the plant, wife will add a couple fresh leaves to her drinks, but I'm looking to do something industrious with all this mint.

Any ideas?

Makes great tea. Wife makes mint jelly with it.

The jelly is a possibility.  I just can't see what I would eat it with.

Albondigas stew/soup. In the traditional Mexican soup the meatballs use mint as one of the herbs.

Food processor, a tiny bit of oil to emulsify, mint chutney. You would need to pair it up with some Indian food of course, really good with Chicken Tandoori. Or sell it to some indian restaurant that is looking for fresh herbs. Dehydrate. Many things can be done. Muddle it for Mojitos

Be very careful, these spread like wildfire. I had a planter box taken over by a closely placed pot with chocolate mint.

If I had a surplus of mint, I'd have mojitos in the pool every evening instead of gin and tonics.

You could plant some of it around the house if you have mice issues.
