Yeah.. true.  Our power goes out often enough, we need to make some other arrangements.  I think I'll get the sidekick attachment (that uses propane) for our pellet grill and maybe we can find a grill that will also fit on top of our little backyard firepit.  This is ridiculous!

Oh man, since we modified it to do whole hog it's been my favorite to cook on now.

Out of all the other gadgets I have I have been using it the most. I can't even remember the last time I fired up the sidebox smoker.

My version of carnitas. Slather pork butt in cholula hot sauce as a binder then coat with fajita seasoning Attachment Attached File


Smoke until 165 internal. Put in roasting pan with butter, chicken broth, cholula and more fajita seasoning.
