Pop down I75 when you cross it on I10 (near Lake City, hour or so W. of Jax) and hit the one or more of the springs in Gilchrist/Columbia/etc. counties.
I'd recommend the Itchetucknee BUT you gotta get there early in the morning - there is always a head count limit, may be even lower due to wuflu https://www.floridastateparks.org/parks-and-trails/ichetucknee-springs-state-park |

WWII Museum in New Orleans. You can spend a day there easily.
