I am familiar with Viking Blood. It's good stuff. They do fortify their mead with spirits to achieve the high ABV. I haven't made a ginger mead yet, I am kind of scared!

I thought they might be adding a little something to juice it up a bit. What is the typical alcohol content of mead?

The other day I poured some viking blood and added a little sliver of fresh ginger. It was pretty damn good. I am going to order some of yours and try it out, the the 3 bottle pack sounds interesting :)

So when I am finished fermenting it is usually 14-17% ABV. But then when you add honey to back-sweeten the ABV comes down about 1-3% depending on how much you use.  The Viking's blood is both sweet and highly alcoholic, which makes you suspicious that it could be fortified. It's very difficult to get 18% sweet mead in a "natural" way.

A "dark horse" of ours is the Citra X, it's a little different because of the hops and lemon, has flavors of mint, lemon candy, passion fruit, jasmine, and lime.

Bump so we don't archive.Attachment Attached File

600 lbs of Utah Balaton cherries sitting in the fermenter. This is about 3 feet in diameter and 2.5-3 feet deep.

Anti-archive bump!

I've made a couple batches after falling in love with the stuff in England, but mine always seems to taste a bit like rubbing alcohol lol

Well there are probably reasons for that.

I suggest you google "BOMM Mead" and follow that procedure exactly. That is not the process I use anymore, but if you follow it, your mead will turn out.

Thank you for the bump.

I recommend you check out BOMM or TOSNA methods to make more palatable meads.

i have been wanting to try mead.  I finally got a bottle at the store this weekend.  It was really good.  I think I might try making some one of these days.

Cool. We also ship to most states so if you'd like to support a fellow arfcommer, that's an option. :)

I bought one of those 1 gallon kits around Christmas, and made my first batch with my own honey. Just straight up, no flavoring.
Haven't tasted it yet though.

Free bump, and can you ship to Texas?

For the record, you've motivated me to brew a batch of mead (again).

I thought there might be some interest in this here. I wanted to post some pictures.

(Caption: my first 24 batches of mead, and 1 Cabernet that I did. This represents 16 months of mead making)

So how did I get here?
It all started with a couple of jugs of South Dakota honey from my father in law.

And then I started making 1 gallon batches to try different flavors

Blackberry on the left, peach on the right.

At first the labels were basic:

Eventually got more elaborate:

(it's perfectly clear but the glass is fogged up)

Which leads me to some of my favorites:

A wild blueberry mead with local wildflower honey...

And, a ridiculously over the top pyment that cost me well over $200 to make 5 gallons of:

Spanish Temperanillo grape must, sour Montmorency Cherries, Wildflower Honey, Blood orange juice.

Did you attempt to get your mead to ferment in the beer bottles to get a little carbonation? If so, how well did it work for you? Or did you just use beer bottles for convenient grab and go?

No, that doesn't really work for mead, since it ferments completely dry (unlike beer)

What if you used a higher alcohol tolerance yeast?

The alcohol tolerance for yeast is a range, not a set value.
Forced carbonation is better.
